1 package (3.4 oz) instant vanilla pudding mix
2 cups milk (or almond/oat milk for a dairy-free option)
8 oz whipped topping (or Greek yogurt/coconut whipped cream for a healthier alternative)
1/2 cup caramel sauce (homemade or store-bought)
2 cups apples, peeled and diced (or pears/peaches for a different flavor)
1 package (around 12) eclair shells
