1 ½ cups graham cracker crumbs
½ cup unsalted butter, melted
24 oz cream cheese, softened
1 cup granulated sugar
1 tsp vanilla extract
3 large eggs
2 cups apples, peeled and diced
½ cup caramel sauce
Preheat the oven to 325°F (160°C).
Combine graham cracker crumbs and melted butter in a bowl and press into the bottom of a 9-inch springform pan. Bake for 10 minutes, then cool.
Beat softened cream cheese until smooth. Gradually add sugar, then add eggs one at a time. Mix in vanilla extract.
Gently fold in diced apples and pour the mixture over the cooled crust.
Wrap the bottom of the springform pan in aluminum foil and place it in a larger baking dish with water. Bake for 50-60 minutes.
Allow to cool at room temperature for about an hour, then refrigerate for at least 4 hours.
Remove from springform pan and drizzle with caramel before serving.
