1 lb Italian sausage (sweet or spicy)
4 large potatoes, diced
1 onion, diced
4 cloves garlic, minced
4 cups chicken broth
2 cups kale, chopped
1 cup heavy cream
Salt and pepper to taste
Prep the Ingredients: Begin by dicing the potatoes and onion, and mincing the garlic. Chop the kale into bite-sized pieces for easy eating.
Brown the Sausage: In a skillet over medium heat, cook the sausage until browned. Break it up into smaller pieces as it cooks. This takes about 5-7 minutes. Transfer the cooked sausage to the crockpot.
Add Vegetables and Broth: To the crockpot, add the diced potatoes, onion, minced garlic, and chicken broth. Stir to combine.
Cook on Low: Cover the crockpot and cook on low for 6-8 hours or high for 3-4 hours. The longer it cooks, the more flavorful the soup will become.
Add Kale: About 30 minutes before serving, add the chopped kale to the crockpot, along with the heavy cream. Stir well to incorporate everything.
Season to Taste: Before serving, taste the soup and add salt and pepper as needed.
