1 lb ground beef
1 medium onion, chopped
2 cups beef broth
2 cups diced potatoes
1 cup cheddar cheese, shredded
1 cup milk
Salt and pepper to taste
In a large pot over medium heat, add the ground beef and chopped onion. Cook until the beef is browned, breaking it apart as it cooks. Drain excess fat if needed.
Stir in the beef broth and diced potatoes. Allow it to come to a gentle boil, then reduce heat and simmer for about 10 minutes until the potatoes are tender.
Once the potatoes are cooked, add in the milk and cheese, stirring well to combine. Continue to cook on low heat until the cheese is melted and the soup is creamy.
Season with salt and pepper according to your preference. Feel free to add other seasonings like garlic powder or paprika for an extra kick.
Ladle the soup into bowls and serve hot, garnished with your favorite burger toppings.
