1 cup pumpkin puree (or mashed sweet potato)
1 cup granulated sugar (or brown sugar)
½ cup vegetable oil (or unsweetened applesauce)
2 eggs (or flaxseed meal mixture)
1 ½ cups all-purpose flour (or whole wheat flour)
1 tsp baking powder
1 tsp baking soda
1 tsp ground cinnamon
½ tsp ground nutmeg
¼ tsp salt
Preheat the oven to 350°F (175°C) and grease a 9-inch square baking pan.
In a large mixing bowl, combine pumpkin puree, sugar, oil, and eggs. Whisk until smooth.
In another bowl, whisk together flour, baking powder, baking soda, cinnamon, nutmeg, and salt.
Gradually add the dry ingredients to the wet ingredients, stirring until just combined.
Transfer the batter to the prepared baking pan and smooth the top.
Bake for 25-30 minutes or until a toothpick comes out clean.
Allow to cool for about 10 minutes in the pan, then transfer to a wire rack.
Slice and serve with coffee or tea.
