1 cup pumpkin puree
1 cup granulated sugar
1/2 cup melted butter
1 cup all-purpose flour
1/2 cup cocoa powder
2 large eggs
1 tsp vanilla extract
Optional sweeteners: honey or maple syrup
Preheat the oven: Set your oven to 350°F (175°C) and grease a 9×9-inch baking pan.
Mix the brownie batter: In a large mixing bowl, combine melted butter and sugar, mixing well. Add the eggs one at a time, followed by the vanilla extract.
Incorporate dry ingredients: Sift together the flour and cocoa powder, then fold into the wet mixture until just combined. Avoid overmixing!
Prepare the pumpkin layer: In another bowl, mix pumpkin puree, sugar, and a pinch of salt until smooth.
Layer the batter: Pour half of the brownie batter into the prepared pan, followed by the pumpkin layer. Drop spoonfuls of the remaining brownie batter on top of the pumpkin layer, and swirl gently with a knife for a marbled effect.
Bake: Bake for 25-30 minutes, checking for doneness. Allow to cool before slicing.
