  • 1 tsp dried thyme
  • Salt and pepper to taste
  • Optional: cooked bacon or sausage for garnish

  • Start by peeling and chopping the Yukon Gold potatoes into bite-sized pieces. Dice the onion and mince the garlic.
  • In a skillet, heat a small amount of olive oil over medium heat. Add the diced onion and sauté until translucent (about 3-5 minutes). Then add the minced garlic and cook for another minute, or until fragrant.
  • Transfer the sautéed onion and garlic to the slow cooker. Add the chopped potatoes, broth, thyme, and seasoning. Stir everything together until well combined.
  • Cover and cook on low for 6-8 hours or on high for 3-4 hours. The potatoes should be tender and easily pierced with a fork.
  • Once the soup is cooked, stir in the heavy cream (or desired substitute) for added creaminess. Taste and adjust the seasonings if necessary.
  • Ladle the soup into bowls and garnish with crispy bacon or sausage if desired. Enjoy warm with crusty bread for a complete meal!
