1 lb ground turkey or chicken
1 medium onion, diced
2 cloves garlic, minced
1 can diced tomatoes
4 cups chicken or vegetable broth
2 cups pasta (your choice)
1 cup spinach or kale
1 cup ricotta cheese
1 tbsp Italian seasoning
Salt and pepper to taste
In a large pot, over medium heat, add ground turkey or chicken. Cook until browned, breaking it apart with a spatula. Drain excess grease if necessary.
Once the meat is nearly cooked, add the diced onion and garlic. Sauté until the onions are translucent and fragrant, around 2-3 minutes.
Pour in the diced tomatoes (with juices) and broth. Stir to combine, allowing the mixture to simmer.
Stir in your chosen pasta and bring the soup to a boil. Reduce heat and let simmer for about 10-12 minutes or until the pasta is al dente.
When the pasta is cooked, add in the spinach or kale. Allow it to wilt, which takes about 2-3 minutes.
Stir in ricotta cheese until well blended. Season with Italian spices, salt, and pepper to taste.
Ladle the soup into bowls and enjoy! Top with more cheese or fresh herbs if desired.
