  • 1 lb ground turkey or chicken
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 1 can diced tomatoes
  • 4 cups chicken or vegetable broth
  • 2 cups pasta (your choice)
  • 1 cup spinach or kale
  • 1 cup ricotta cheese
  • 1 tbsp Italian seasoning
  • Salt and pepper to taste
  • Instructions

  • In a large pot, over medium heat, add ground turkey or chicken. Cook until browned, breaking it apart with a spatula. Drain excess grease if necessary.
  • Once the meat is nearly cooked, add the diced onion and garlic. Sauté until the onions are translucent and fragrant, around 2-3 minutes.
  • Pour in the diced tomatoes (with juices) and broth. Stir to combine, allowing the mixture to simmer.
  • Stir in your chosen pasta and bring the soup to a boil. Reduce heat and let simmer for about 10-12 minutes or until the pasta is al dente.
  • When the pasta is cooked, add in the spinach or kale. Allow it to wilt, which takes about 2-3 minutes.
  • Stir in ricotta cheese until well blended. Season with Italian spices, salt, and pepper to taste.
  • Ladle the soup into bowls and enjoy! Top with more cheese or fresh herbs if desired.
