1 cup pumpkin puree
2 cups all-purpose flour
1 cup sugar
2 large eggs
2 tsp baking powder
1 tsp baking soda
2 tsp ground cinnamon
1/2 tsp salt
1/2 cup honey
1/2 cup butter (melted)
Preheat your oven to 350°F (175°C). Grease a 9×13 inch baking dish with butter or non-stick spray.
In a medium bowl, whisk together the flour, sugar, baking powder, baking soda, cinnamon, and salt. Make sure there are no lumps.
In a large bowl, combine the pumpkin puree, melted butter, eggs, and honey. Whisk until well combined and smooth.
Gradually add the dry ingredients to the wet ingredients, mixing gently until just combined. Avoid overmixing to keep the cake tender.
Pour the batter into the prepared baking dish and spread evenly. Bake for 30-35 minutes, or until a toothpick inserted in the center comes out clean.
While the cake is baking, mix the honey and 2 tablespoons of water in a small pot over low heat until melted and combined.
Once the cake is done, remove it from the oven and allow it to cool for about 10 minutes. Drizzle the warm honey glaze over the cake while it’s still warm, allowing it to soak in.
