2 lbs skinless chicken breasts
4 cups chicken broth
3 carrots, sliced
2 celery sticks, chopped
1 onion, diced
2 potatoes, cubed
3 cloves garlic, minced
1 teaspoon dried thyme
Salt and pepper to taste
Prepare Your Ingredients: Start by washing and preparing all your vegetables. Chop your onions, slice the carrots and celery, and cube the potatoes.
Layer the Ingredients: In your slow cooker, add the chopped onions, carrots, and celery first to create a bed for the chicken. Then, place the skinless chicken breasts on top, followed by the cubed potatoes and minced garlic.
Add Broth and Seasoning: Pour in the chicken broth over everything and sprinkle the dried thyme, salt, and pepper.
Set the Slow Cooker: Cover and set your slow cooker to low for 6-8 hours or high for 3-4 hours.
Check Doneness: About 30 minutes before the cooking time is done, use a fork to check the chicken. If it’s shredding easily, it’s done.
Serve: Once finished, shred the chicken using two forks and stir it back into the stew. Serve hot.
