1 lb spicy sausage
4 medium potatoes, diced
1 medium onion, diced
3 cloves garlic, minced
4 cups chicken broth
1 teaspoon paprika
Salt and pepper to taste
2 cups kale or spinach (optional)
Brown the sausage in a large pot over medium heat for 5-7 minutes, breaking it into small pieces.
Add the diced onions and cook until softened, about 3-4 minutes, then stir in the minced garlic for 1 minute.
Incorporate the diced potatoes and season with paprika, salt, and pepper, cooking for 2 minutes.
Pour in the chicken broth and bring to a boil, then reduce heat and simmer.
Cover and simmer for 15-20 minutes until the potatoes are tender.
Add greens in the last 5 minutes of cooking to wilt.
Taste and adjust seasonings as desired.
Serve hot, optionally with crusty bread.
