1 lb Ground beef (or turkey)
1 medium Onion, chopped
1 Bell pepper, chopped
1 can (14.5 oz) Diced tomatoes
1 packet Taco seasoning
1 can (15 oz) Black beans, drained
2 cups Vegetable broth
1 cup Frozen corn
Optional toppings: Sour cream, avocado, cheese, cilantro
In a large pot, over medium heat, cook the ground beef (or alternative) until browned. Make sure to break it up with a wooden spoon for even cooking. Drain excess fat.
Add chopped onions and bell pepper. Sauté for about 5 minutes until the vegetables soften.
Sprinkle in the taco seasoning and stir well to combine it with the meat and veggies. Let it cook for an additional minute to release deeper flavors.
Stir in the diced tomatoes, black beans, corn, and vegetable broth. Bring the mixture to a simmer.
Let the soup cook for 10-15 minutes, allowing the flavors to meld together. Taste and adjust seasoning if necessary.
Ladle the soup into bowls, and top with your favorite toppings such as sour cream, avocado, cheese, or fresh cilantro.
