1 lb ground beef (or turkey)
1 can black beans, drained
1 can corn, drained
1 can diced tomatoes
1 packet taco seasoning
1 cup beef or vegetable broth
1 onion, chopped
1 bell pepper, chopped
In a large pot, heat a tablespoon of olive oil over medium heat. Add chopped onions and bell peppers. Sauté until they are soft, roughly 5 minutes.
Add your ground beef or turkey to the pot. Break it apart using a spatula, cooking until browned, about 5-7 minutes.
Pour in the drained black beans, corn, and diced tomatoes. Stir in the taco seasoning and broth. Mix ingredients well.
Bring the mixture to a boil, then reduce the heat, cover, and let it simmer for 20-30 minutes.
After simmering, taste your soup. Adjust seasoning with more taco seasoning, salt, or pepper if needed.
Ladle the soup into bowls. Top with your favorite garnishes such as shredded cheese, avocado, sour cream, and fresh cilantro.
