1 cup pearl barley
2 tablespoons olive oil
1 onion, chopped
2 carrots, diced
2 celery stalks, chopped
2 garlic cloves, minced
6 cups vegetable broth
1 can diced tomatoes
1 zucchini, diced
1 teaspoon dried thyme
Salt and pepper to taste
Rinse the pearl barley under cold water.
In a large pot, heat the olive oil over medium heat. Add the chopped onion, celery, and carrots. Sauté for about 5 minutes.
