2 cups cooked chicken, shredded
1 can (15 oz) white beans (like cannellini or great northern)
1 medium onion, chopped
2 cloves garlic, minced
1 can (4 oz) diced green chilies
2 cups chicken broth
1 tsp cumin
1 tsp chili powder
1 cup sour cream
Salt and pepper to taste
Gather all your ingredients and have them ready to use.
In a large pot, heat olive oil over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes. Add minced garlic and sauté for another minute until fragrant.
Stir in the shredded chicken and white beans, mixing well.
Add the diced green chilies, chicken broth, cumin, chili powder, salt, and pepper. Stir everything together until well combined.
Increase the heat and bring the pot to a boil. Once boiling, reduce the heat to low and let it simmer for at least 20 minutes, stirring occasionally.
Remove the pot from heat and stir in the sour cream until fully combined.
Taste your chili and adjust seasoning as needed.
