- Pat the chicken drumsticks dry with paper towels. Mix together all dry rub ingredients and generously coat each drumstick. Let chicken rest at room temperature for 20-30 minutes.
- Preheat grill to medium-high heat (375-400°F). Create a two-zone fire with hot side for searing and cooler side for indirect cooking. Brush grill grates with oil.
- Place chicken on hot side of grill and sear for 2-3 minutes per side for grill marks. Move to cooler side, cover, and cook for 20-25 minutes until internal temperature reaches 165°F, turning occasionally.
- During last 5-10 minutes of cooking, brush drumsticks with barbecue sauce. Turn frequently to build up layers of glaze without burning.
- Remove chicken from grill and let rest for 5 minutes before serving. Garnish with fresh herbs if desired.
Notes
Use a meat thermometer to ensure 165°F internal temperature. Don't add barbecue sauce too early to prevent burning. Create perfect grill marks by placing chicken at 45-degree angle to grates. Always let chicken rest before serving to retain juices.
