Ingredients

Ingredients
  • 8 slices of white or whole wheat bread
  • 1 large cucumber, thinly sliced
  • 8 oz cream cheese, softened
  • 2 tbsp fresh dill, chopped
  • 1 tbsp lemon juice
  • Salt and pepper to taste
  • 1 tbsp butter, softened (optional, for spreading)

Method

Instructions
  1. In a mixing bowl, combine the softened cream cheese, chopped dill, lemon juice, salt, and pepper. Mix until smooth and well combined.
  2. Using a sharp knife or a mandoline, thinly slice the cucumber. Pat the slices dry with a paper towel to remove excess moisture if desired.
  3. Lay out the slices of bread on a clean surface. Lightly butter each slice if desired. Spread a generous layer of the herbed cream cheese mixture onto each slice. Arrange the cucumber slices evenly over the cream cheese on half of the bread slices. Top with the remaining slices of bread to form sandwiches.
  4. Using a sharp knife, carefully trim the crusts off the sandwiches for a clean, elegant look. Cut each sandwich into quarters or smaller rectangles to create bite-sized tea sandwiches. Arrange them on a platter and serve immediately.

Notes

Choose fresh, soft bread for the best results. Assemble sandwiches just before serving to prevent sogginess. For extra flavor, consider adding fresh chives or garlic powder to the cream cheese mixture.
