Ingredients

Ingredients
  • 6 cups fresh peaches, peeled and sliced
  • 1 cup granulated sugar
  • 1/2 cup brown sugar
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 1 teaspoon vanilla extract
  • 1 tablespoon lemon juice
  • 2 cups all-purpose flour
  • 1/2 cup unsalted butter, cold and cubed
  • 1/2 cup milk
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt

Method

Instructions
  1. In a large bowl, combine the sliced peaches, granulated sugar, brown sugar, cinnamon, nutmeg, vanilla extract, and lemon juice. Toss gently to coat the peaches evenly. Let the mixture sit for 15 minutes to allow the juices to form.
  2. Preheat your oven to 375°F (190°C). Grease a 9x13-inch baking dish with butter or non-stick spray.
  3. In a separate bowl, whisk together the flour, baking powder, and salt. Add the cold, cubed butter and use a pastry cutter or your fingers to work the butter into the flour mixture until it resembles coarse crumbs. Stir in the milk until the dough comes together.
  4. Pour the peach mixture into the prepared baking dish, spreading it out evenly. Drop spoonfuls of the biscuit dough over the peaches, covering as much of the surface as possible.
  5. Bake in the preheated oven for 35-40 minutes, or until the topping is golden brown and the peach filling is bubbly.
  6. Let the cobbler cool for a few minutes before serving. Enjoy it warm with a scoop of vanilla ice cream or a dollop of whipped cream.

Notes

For the best flavor, use ripe, fresh peaches. Adjust the sugar based on the sweetness of the peaches. For an extra buttery topping, brush the biscuit dough with melted butter before baking. You can prepare the peach filling ahead of time and store it in the refrigerator until ready to bake.
