  • 1 cup granulated sugar
  • 1/2 cup unsalted butter
  • 1 cup all-purpose flour
  • 1 tablespoon baking powder
  • 1/4 teaspoon salt
  • 1 cup milk
  • 1 teaspoon vanilla extract
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg

  1. Preheat the oven to 375°F (190°C).
  2. In a large bowl, toss the sliced peaches with 1/2 cup of sugar, cinnamon, and nutmeg. Set aside to let the flavors meld while you prepare the batter.
  3. In another bowl, whisk together the flour, remaining 1/2 cup sugar, baking powder, and salt. Gradually add the milk and vanilla extract, stirring until the batter is smooth and free of lumps.
  4. Place the butter in a 9x13-inch baking dish and transfer it to the preheated oven. Allow the butter to melt completely, then remove the dish from the oven.
  5. Pour the batter evenly over the melted butter in the baking dish. Do not stir. Spoon the peach mixture over the batter, distributing it evenly. Again, do not stir.
  6. Return the dish to the oven and bake for 40-45 minutes, or until the crust is golden brown and a toothpick inserted into the center comes out clean.
  7. Let the cobbler cool for a few minutes before serving. It's best enjoyed warm, perhaps with a scoop of vanilla ice cream or a dollop of whipped cream.

Notes

For the best flavor, use ripe but firm peaches. If fresh peaches aren't available, canned or frozen peaches work well too—just adjust the sugar to taste. For a crispier topping, sprinkle a handful of rolled oats or crushed nuts over the batter before adding the peaches. You can prepare the peach mixture and batter separately a day ahead. Store them in the refrigerator and assemble just before baking.
