Instructions
- Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper or foil for easy cleanup.
- Pat the chicken legs dry with paper towels. This is crucial for achieving crispy skin. Place them in a large bowl and drizzle with olive oil, tossing to coat evenly.
- In a small bowl, mix together the brown sugar, smoked paprika, garlic powder, onion powder, black pepper, salt, and cayenne pepper if using. Sprinkle this spice rub over the chicken legs and massage it into the skin, ensuring even coverage.
- Arrange the seasoned chicken legs on the prepared baking sheet, leaving space between each piece for even cooking. Bake for 25 minutes.
- While the chicken bakes, mix the barbecue sauce with apple cider vinegar. After 25 minutes, remove the chicken from the oven and brush generously with the barbecue sauce mixture.
- Return to the oven and bake for another 15-20 minutes, or until the internal temperature reaches 165°F (74°C) and the skin is crispy and caramelized.
- Let the chicken rest for 5 minutes before serving. This allows the juices to redistribute throughout the meat.
Notes
Dry the chicken thoroughly for crispy skin, don't crowd the pan for even cooking, use a meat thermometer for perfect doneness, and customize your sauce with different barbecue flavors or honey for extra sweetness.
