- Bring a large pot of salted water to a boil. Add the pasta and cook according to package instructions until al dente. Drain and rinse under cold water to stop the cooking process. Set aside to cool.
- In a small bowl, whisk together the olive oil, balsamic vinegar, minced garlic, salt, and pepper. If you prefer a slightly sweeter dressing, add honey or grape juice and mix well.
- In a large bowl, combine the cooked pasta, halved cherry tomatoes, mozzarella balls, and chopped basil. Pour the dressing over the top and gently toss to coat everything evenly.
- Cover the bowl and refrigerate for at least 30 minutes to allow the flavors to meld together. Serve chilled and enjoy!
Notes
Use fresh ingredients for the best flavor. Customize with any pasta shape and consider adding grilled chicken for a heartier meal. Can be made ahead and stored in the fridge for up to 3 days.
