- Preheat the Grill: Heat your grill or grill pan to medium-high heat. Brush the peach halves lightly with olive oil to prevent sticking.
- Grill the Peaches: Place the peach halves cut-side down on the grill. Cook for 2-3 minutes until they develop grill marks and slightly soften. Flip and grill for another 1-2 minutes. Remove from heat and let them cool slightly.
- Assemble the Salad: Arrange the grilled peach halves on a serving platter. Tear the burrata cheese into chunks and place it over the peaches. Scatter fresh basil leaves on top.
- Drizzle and Season: Drizzle the salad with balsamic glaze, honey, and a touch of olive oil. Season with salt and freshly ground black pepper to taste. Add toasted pine nuts or almonds if desired for extra texture.
- Serve Immediately: Enjoy the salad right away while the peaches are still warm and the burrata is creamy.
Notes
Choose ripe but firm peaches for grilling. Enhance the balsamic glaze by reducing balsamic vinegar in a saucepan. For a heartier salad, serve over a bed of arugula or mixed greens. Peaches can be grilled ahead and stored in the refrigerator.
