Ingredients

Ingredients
  • 4 ripe peaches, sliced
  • 8 oz burrata cheese
  • 2 cups mixed greens (arugula, spinach, or spring mix)
  • 1/4 cup fresh basil leaves, torn
  • 1/4 cup fresh mint leaves, torn
  • 1/4 cup extra-virgin olive oil
  • 2 tbsp balsamic vinegar
  • 1 tbsp honey
  • Salt and freshly ground black pepper to taste
  • 1/4 cup toasted pine nuts or slivered almonds (optional)

Method

Instructions
  1. Wash and slice the peaches into thin wedges. If the peaches are very ripe, handle them gently to avoid bruising.
  2. In a large bowl, combine the mixed greens, torn basil, and mint leaves. Toss gently to mix.
  3. Arrange the peach slices on top of the greens. Tear the burrata cheese into small pieces and place them over the peaches.
  4. In a small bowl, whisk together the olive oil, balsamic vinegar, honey, salt, and pepper until well combined.
  5. Drizzle the balsamic mixture over the salad. Sprinkle with toasted pine nuts or almonds if using. Serve immediately and enjoy!

Notes

Choose ripe, fragrant peaches for the best flavor. Serve immediately to enjoy the freshness of the burrata. Customize with your favorite greens or add grilled chicken or shrimp for extra protein.
