- Preheat the oven to 375°F (190°C). Grease a baking dish with olive oil or cooking spray.
- Season the chicken breasts with salt, pepper, oregano, and basil. Place them in the prepared baking dish.
- Arrange the sliced zucchini around the chicken. Drizzle with olive oil and sprinkle the minced garlic over the top.
- Place the dish in the preheated oven and bake for 25 minutes.
- After 25 minutes, sprinkle the shredded mozzarella and grated Parmesan cheese over the chicken and zucchini. Return to the oven and bake for an additional 10-15 minutes, or until the chicken is cooked through and the cheese is golden and bubbly.
- Remove from the oven and let it rest for a few minutes before serving. Garnish with fresh herbs if desired.
