- Preheat your grill or grill pan to medium-high heat. Brush the peach halves with olive oil and place them cut-side down on the grill. Cook for 2-3 minutes until grill marks appear and the peaches soften slightly. Flip and grill for another 1-2 minutes. Remove from heat and let cool.
- In a large bowl, combine the arugula, fresh basil leaves, and toasted nuts. Toss gently to mix.
- Slice the grilled peaches into wedges and arrange them over the arugula mixture. Tear the burrata cheese into pieces and place it on top of the peaches.
- In a small bowl, whisk together the balsamic vinegar, honey, and a pinch of salt and pepper. Drizzle this mixture over the salad. Finish with an extra drizzle of olive oil if desired.
Notes
Choose ripe but firm peaches for grilling. Enhance smoky flavor using a grill pan or cast-iron skillet if a grill is unavailable. Add grilled chicken or shrimp for a heartier meal. Grill peaches ahead of time and store in the refrigerator, but assemble the salad just before serving to keep greens fresh.
