- Preheat your oven to 350°F (175°C). Grease an 8-inch round or square baking pan and line it with parchment paper for easy removal.
- In a large mixing bowl, whisk together the flour, sugar, cocoa powder, baking soda, and salt until well combined and no lumps remain.
- Make three wells in the dry ingredients. Pour the warm water into one well, vegetable oil into another, and the apple cider vinegar and vanilla extract into the third. Gently stir everything together until just combined - don't overmix!
- Pour the batter into your prepared pan and smooth the top. Bake for 30-35 minutes, or until a toothpick inserted into the center comes out clean with a few moist crumbs attached.
- Let the cake cool in the pan for 10 minutes, then transfer to a wire rack to cool completely. Dust with powdered sugar or frost with your favorite chocolate frosting.
Notes
Don't overmix the batter for a tender crumb. Use room temperature ingredients for even incorporation. Start checking for doneness at 25 minutes to avoid overbaking. Add chocolate chips, nuts, or instant coffee for flavor variations.
