Ingredients

Ingredients
  • 2 cups fresh strawberries, hulled and sliced
  • 1 large English cucumber, thinly sliced
  • 1/2 cup crumbled feta cheese
  • 1/4 cup fresh mint leaves, chopped
  • 2 tablespoons fresh basil leaves, chopped
  • 2 tablespoons extra virgin olive oil
  • 1 tablespoon honey
  • 2 tablespoons fresh lemon juice
  • 1/4 teaspoon sea salt
  • 1/8 teaspoon black pepper

Method

Instructions
  1. Prepare the vegetables by washing and slicing the strawberries and cucumber. Place them in a large mixing bowl.
  2. Add the crumbled feta cheese, chopped mint, and basil to the bowl with the strawberries and cucumber.
  3. In a small bowl, whisk together the olive oil, honey, lemon juice, salt, and pepper until well combined.
  4. Pour the dressing over the salad ingredients and toss gently to combine, being careful not to crush the strawberries.
  5. Let the salad sit for 5-10 minutes to allow the flavors to meld together before serving.

Notes

For best results, use ripe but firm strawberries that hold their shape. English cucumbers work best as they have fewer seeds and thinner skin. If making ahead, keep dressing separate and toss just before serving to maintain crispness.
