- Preheat your oven to 375°F (190°C). Line a baking sheet with parchment paper.
- Roll out the thawed puff pastry on a lightly floured surface. Transfer it to the prepared baking sheet and prick the surface with a fork to prevent excessive puffing.
- In a bowl, toss the halved cherry tomatoes with olive oil, balsamic vinegar, honey, thyme, salt, and pepper. Arrange the tomatoes evenly over the puff pastry, leaving a small border around the edges.
- Bake in the preheated oven for 20-25 minutes, or until the pastry is golden brown and the tomatoes are tender.
- Remove the tart from the oven and sprinkle crumbled feta cheese and chopped basil over the top. Allow it to cool slightly before slicing and serving.
Notes
Choose ripe tomatoes for the best flavor. Customize the cheese with goat cheese or mozzarella if preferred. Add toasted pine nuts or slivered almonds for extra texture. Serve warm or at room temperature.
