  1. Wash and slice the peaches into thin wedges. If the peaches are very firm, you can lightly grill them for a minute on each side to enhance their sweetness.
  2. In a large bowl, combine the arugula, sliced peaches, and fresh basil leaves. Toss gently to mix.
  3. Tear the burrata cheese into large chunks and place it on top of the salad. Drizzle with extra virgin olive oil and balsamic glaze.
